ADASI - PERSIAN LENTIL SOUP

Adasi is a wholesome vegan dish, commonly eaten for breakfast in Iran. It is made with green lentils, onions and spices and is often described as a soup by Persians


Adasi – Persian Lentil Soup


Ingredients


* 2 tbsp oil

* 120 g onion, chopped

* 4 cloves garlic, minced

* 300 g potatoes, peeled and diced

* 300 g green lentils, rinsed

* 1 tsp turmeric

* 1 tsp salt

* ½ tsp black pepper

* 2 vegetable stock cubes

* 1 litre boiling water

* Chopped parsley, for garnish (optional)

* Lime wedges or lime juice, for serving (optional)


Method


Heat the oil in a large pot over medium heat. Add the chopped onion and cook for 5–7 minutes until softened and golden. Stir in the garlic and cook for 1 minute until fragrant.

2. Add the diced potatoes and cook for 3–4 minutes, stirring occasionally.

Stir in the turmeric, salt, black pepper, and vegetable stock cubes until the vegetables are well coated.

Add the rinsed green lentils, then pour in the boiling water. Stir well and bring to a boil.

Reduce the heat to low, cover the pot, and simmer for about 30 minutes, or until the lentils and potatoes are tender. If the soup becomes too thick, add a little more hot water to reach your desired consistency.

Serve hot, garnished with chopped parsley and a squeeze of fresh lime juice, if desired.
