Adasi  - Persian Lentil Soup


Ingredients:

• 2 tbsp olive oil

• 1 large onion, chopped

• 4 cloves garlic, minced

• 2 potatoes, peeled and diced

• 350g green lentils

• 1 tsp turmeric

• 1 tsp salt

• ½ tsp black pepper

• 2 vegetable stock cubes

• 1.5 liters boiling water


How to Make:

Sauté the aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

Add the potatoes: Stir in the diced potatoes and cook for a few minutes until slightly softened.

Season and add lentils: Add the green lentils, turmeric, salt, black pepper, and vegetable stock cubes. Stir well to combine.

Simmer: Pour in the boiling water, stir, and bring the soup to a simmer. Cover the pot and cook for about 30 minutes, or until the lentils are fully cooked and tender.

Serve: Ladle the soup into bowls, drizzle with a bit of olive oil, and garnish with chopped parsley and a squeeze of lime juice for extra flavor.
