Arayes are crispy grilled pita sandwich stuffed with minced meat. The meat is seasoned with herbs and spices, then spread inside pita bread and grilled until golden and juicy.
Arayes are crispy grilled pita sandwich stuffed with minced meat. The meat is seasoned with herbs and spices, then spread inside pita bread and grilled until golden and juicy.

Ingredients:

• 500g minced beef or lamb

• 1 large onion, finely chopped

• 1 teaspoon black pepper

• 2 teaspoons salt

• 60g fresh parsley, chopped

• 1 teaspoon sumac (optional, for extra flavor)

• flat pita breads

• Olive oil for brushing


Instructions:

In a large bowl, combine the minced meat, chopped onion, chopped parsley, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Cut the pita bread into quarters, creating 4 pieces

Take each pita piece and carefully spread a thin, even layer of the meat mixture inside. If desired, sprinkle a pinch of sumac on top of the meat for extra flavor.

Brush each side of the stuffed pita with olive oil.

Preheat a grill pan over medium heat. Place the stuffed pitas in the pan, pressing down gently with a weight (like another pan or a heavy lid) to help the meat cook evenly.

Grill the pitas for 3-4 minutes on each side, or until golden brown and crispy. The meat should be fully cooked and the pita should be crispy on the outside.
