Arouq Bl’Lahm is a traditional Iraqi dish made of savory pan-fried patties combining minced meat (typically beef or lamb), fresh herbs, eggs, and potatoes. The name translates loosely to “meat fritters” or “meat pancakes.”
Crisp on the outside and soft and flavorful on the inside, these patties are beloved for their versatility. They can be made vegetarian with mushrooms instead of meat, and served as a snack, appetizer, or part of a main meal. Arouq is especially popular in home cooking, offering comfort and heartiness with every bite.
Arouq Bl' Lahm
INGREDIENTS:
• 200g minced beef (or 200g finely chopped mushrooms for vegetarian option)
• 1 medium onion, finely chopped
• 100g fresh parsley, chopped
• 50g chives or green onions, finely chopped
• 6 large eggs
• 200g boiled potatoes, mashed
• 1.5 tsp salt (adjust to taste)
• 1 tsp black pepper
• 1 tsp curry powder
• ½ tsp turmeric
• ½ tsp cumin (optional, adds warmth)
• 2–3 tbsp all-purpose flour (as needed for binding)
• Oil for shallow frying
INSTRUCTIONS:
In a food processor or by hand, finely chop the onion, parsley, chives, and boiled potatoes.
In a large bowl, combine the minced beef (or mushrooms), chopped vegetables, mashed potatoes, and spices (salt, pepper, curry, turmeric, cumin).
Beat the eggs and mix into the bowl. Gradually add flour until the mixture holds together but isn’t stiff. Adjust with more flour or an extra egg if too wet or dry.
Heat a generous amount of oil in a nonstick or cast-iron pan over medium heat.
Spoon dollops of the mixture into the pan and gently flatten into patties. Fry 2–3 minutes per side, or until golden brown and cooked through.
Remove patties and place on paper towels to drain excess oil.
