Arouq u Biadhinjan - vegetarian


Ingredients for Aubergine Preparation:

• 5 aubergines (eggplants), sliced

• Salt

• Kitchen towels


Ingredients for Arouq (Patties):

• 120 g chopped parsley

• 60 g chopped chives

• 1 large onion, chopped

• 500 g boiled and chopped potatoes

• 250 g chopped mushrooms

• 12 eggs, beaten

• 3 teaspoons salt

• 1 teaspoon black pepper

• 2 teaspoons turmeric

• 4 teaspoons curry powder

• 5 tablespoons flour

• Oil for frying


Instructions:


Slice the aubergines, sprinkle with salt, and place in a colander for 2 hours to drain excess water. Pat dry with kitchen towels.

In a food processor, combine the parsley, chives, onion, potatoes, and mushrooms. Add the beaten eggs, salt, pepper, turmeric, and curry powder. Blend until well combined.

Gradually add the flour to bind the mixture. Adjust flour or egg if needed for the right consistency.

Heat oil in a pan over medium heat and fry the aubergine slices until golden brown. Drain on kitchen towels.

Shape the Arouq mixture into patties and fry in hot oil until golden brown on both sides. Drain on kitchen towels.
