Baghali polo (باقالی پلو) is a classic Persian (Iranian) rice dish made with dill and broad beans (fava beans).It’s often served with lamb shanks, chicken, or fish on the side, making it a festive dish for special occasions and family gatherings.
Baghali Polo - One-Pot Broad Beans & Dill Rice
Ingredients:
• 400 g green broad beans (peeled, frozen or fresh)
• 400 g basmati rice (washed until water runs clear, soaked 20 min if possible)
• 3–4 tbsp oil (plus extra for tahdig if desired)
• 1½ tsp salt
• ½ tsp black pepper
• ½ tsp turmeric
• 1 vegetable stock cube
• 4 tbsp dried dill
• 850 ml water (just enough to cover rice by ~1 cm)
Instructions:
Heat 2 tbsp oil in a large non-stick pot over medium heat.
Add broad beans and sauté for 3–4 minutes.
Stir in turmeric (if using), salt, pepper, dill, and crumble in the stock cube.
Add washed (and drained) basmati rice to the beans.
Stir gently to coat the rice in the oil and spices.
Pour in about 850 ml hot water – enough to cover the rice by 1 cm.
Bring to a boil, then reduce to medium heat.
Cook uncovered until most of the water has evaporated and little steam holes appear on the surface (about 12–15 minutes).
Reduce to low heat.
Cover the pot with a lid wrapped in a clean kitchen towel.
Steam gently for 45 minutes.
Serve hot with yogurt, salad, or alongside lamb, chicken, or fish.
