Borani Esfenaj is a Persian yogurt-based dip or appetizer made with spinach, yogurt, and garlic. It's a popular dish in Persian cuisine, often served with bread or as a side dish. The term "Borani" refers to a category of Persian dishes made with yogurt and vegetables, and "Esfenaj" signifies spinach.



Borani Esfenaj – Persian Spinach & Yogurt Dip


Ingredients:

250 g baby spinach

2 cloves garlic, minced

500 g Greek yogurt (full-fat recommended)

Salt and black pepper, to taste

2 tbsp water


Instructions:

Heat a pan over medium heat.

Add the spinach, water, and about 1 teaspoon of salt. Cook until the spinach is wilted.

Add the minced garlic and sauté for another 2–3 minutes, stirring constantly.

Transfer the mixture to a colander and allow it to drain and cool completely.

Once cooled, finely chop the spinach mixture if desired, then mix it into the Greek yogurt. Season with pepper and adjust salt if needed

Transfer to a serving dish and garnish with a few spinach leaves


Enjoy with warm Iranian flatbread, pita, or crispy potato chips.
