Chicken Shawarma is a Middle Eastern street food favorite made with thinly sliced chicken. Seasoned with warm spices like cumin, paprika, and garlic, the chicken is juicy and flavorful. It’s typically served in pita or flatbread with toppings like garlic sauce, pickles, and fresh veggies.

Chicken Shawarma

Ingredients:

• 2 kg chicken strips

• 6–8 tablespoons shawarma spice mix

• 2–3 tablespoons coconut oil (or any neutral oil)

Instructions:

Heat a tablespoon of oil in a large pan over medium-high heat.

Add a portion of the chicken strips (don’t overcrowd the pan) and cook until browned.

Once browned, sprinkle in some of the shawarma spices and stir well to coat.

Remove the cooked chicken and set aside.

Repeat the process in batches until all the chicken is cooked.

Once all batches are done, return all the chicken to the pan. Add any remaining shawarma spices and cook together for another 15 minutes, stirring occasionally to ensure the flavors are well combined.

To Serve:

Take a flatbread and spread a layer of Toum (Lebanese garlic sauce).

Add a little Green Schug (Middle Eastern hot sauce) to taste.

Pile on the cooked chicken shawarma.

Top with fresh tomato slices and pickled cucumbers.

Drizzle with Amba sauce (mango pickle sauce).

Wrap in parchment paper, cut in half, and enjoy!
