Dolma is a popular dish in Middle Eastern,Mediterranean cuisine,consisting of grape leaves and vegetables stuffed with a savory mixture. The filling typically includes rice, minced meat, herbs and spices. The stuffed vegetables and grape leaves are then rolled/stuffed and simmered in tomato sauce. There are many regional variation, with each culture offering its own twist on the recipe.

Dolma M'hasha


Filling

• 400g basmati rice (washed)

• 250g minced meat (or vegetarian mince/mushrooms)

• 4 tbsp dried parsley

• 2 tbsp dried mint

• 1 chopped onion

• 1 tsp pepper

• 1 tsp salt

• Juice of 1 lemon

• 1 tsp cinnamon

• 3 tbsp tomato puree

• 2 tbsp oil


Sauce

• Juice of 1 lemon

• 4 tbsp oil

• 4 tbsp tomato paste

• 2 tsp salt

• 1 tsp pepper

• 1 tsp cinnamon

• 1 liter water


Vegetables

• 3 large onions (boil 30 min, cool, and peel layers)

• 7 to 8 mini aubergines (carved out)

• 4 to 5 mini courgettes (carve out)

• 4 green peppers (seeded)

• 15-20 vine leaves (washed)


HOW TO MAKE:

1. Mix all filling ingredients.

2. Stuff the prepared vegetables and vine leaves.

3. Arrange stuffed vegetables in a pot.

4. Mix sauce ingredients, add water, and pour over the dolma.

5. Cook on high heat for 1 hour, then low heat for another hour.
