Minced Meat Kebab is a grilled dish made from ground beef or lamb mixed with spices, herbs, onion. The mixture is shaped around skewers and cooked over charcoal for a smoky flavor and juicy texture. Often served with flatbread, rice, and dips, it’s a classic BBQ favorite across the Middle East and beyond.
Grilled Kebab Skewers
Ingredients:
• 1.5 kg minced meat (preferably lamb or beef, or a mix of both)
• 2 large onions, finely chopped and squeezed to remove excess moisture
• 60 g fresh parsley, finely chopped and squeezed to remove excess moisture
• 1 tsp black pepper
• 3 tsp salt (adjust to taste)
• 3 tsp ground sumac
• 3 tbsp all-purpose flour
Instructions:
In a large mixing bowl, combine the minced meat, onions, parsley, salt, pepper, and sumac.
Add the flour and mix thoroughly until the mixture is well combined and sticky.
Cover the bowl and refrigerate the mixture for at least 30 minutes (or up to overnight) to help it firm up.
Shape the mixture onto metal or soaked wooden skewers, pressing firmly to ensure it sticks.
Grill over medium-high heat on a BBQ until cooked through and nicely charred, turning occasionally.
To Serve:
Serve hot with grilled tomatoes, charred onions, and warm Middle Eastern flatbread such as khubz, naan, or lavash.
