Kecheri (Lentil Rice)


Ingredients:

• 250g red split lentils, washed

• 450g basmati rice, washed

• 2 tbsp oil

• 2 tsp salt

• 4 tbsp tomato puree

• 1 liter water

• 200g butter

• 8 garlic cloves, chopped

• 8 tsp cumin powder

• 600g onions, sliced

• 2 tbsp oil

• 2 packs halloumi cheese, sliced


To Serve:

• Fried eggs

• Yogurt


Instructions:

Combine lentils, rice, salt, oil, tomato puree, and water in a pot. Cook on high heat until the water evaporates.

In a pan, melt butter and margarine. Sauté garlic until golden, stir in cumin, and cook for 2 minutes. Mix into the rice.

Sauté onions in oil until soft. Add halloumi slices on top, then layer the rice over them. Cover and cook on low heat for 45 minutes.

Serve with fried eggs and yogurt
