Khoresht Gojeh Sabz  is a flavourful lamb and herb stew with mouthwatering Persian green plums. These are plums that are harvested unripe and therefore they are wonderfully crunchy and sour. In the stew they become soft but they give it a refreshing sour taste.



Khoresht Gojeh Sabz - (Sour Plum Stew – Beef or Lamb)


Ingredients:

• 500 g beef or lamb chunks (preferably from the shoulder or leg)

• 650 g gojeh sabz (green sour plums)

• 1 small onion, finely chopped

• 2 tablespoons oil

• 1 teaspoon turmeric

• 1 teaspoon black pepper

• 2 teaspoons salt (adjust to taste)

• 5 tablespoons dried parsley

• 2 tablespoons dried mint

• 1 liter boiling water


Instructions:


In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until golden and soft.


Add the beef or lamb chunks to the pot. Cook until the meat is browned on all sides.


Stir in turmeric, black pepper, and salt. Mix well to coat the meat evenly.


Pour in the boiling water. Cover and cook over medium heat for about 1 hour, or until the meat is tender.


Gently add the gojeh sabz. Cook uncovered for 15 minutes, allowing the plums to soften but not disintegrate.



Stir in the dried parsley and mint. Let the stew simmer for another 15 minutes, allowing the herbs to infuse and slightly thicken the stew.



Serve hot with steamed white basmati rice.
