Kubbah Helwa - Easy Recipe


Makes: 39 pieces


Ingredients


For the Shell:

• 250 g ground rice

• 250 g coarse semolina

• 150 g minced meat

• 1½ tsp salt

• 200 ml cold water


For the Filling:

• 550 g minced meat

• 125 g finely diced onions

• 1½ tsp salt

• ½ tsp black pepper

• 2 tbsp 7-spice mix


Instructions


In a food processor, combine the ground rice, semolina, minced meat, and salt.

Gradually add cold water while blending until the mixture forms a soft, pliable dough.

Transfer to a surface or bowl and knead the dough well until smooth. Cover and set aside.

In a separate bowl, mix the minced meat, finely diced onions, salt, pepper, and 7-spice mix until well combined.

Take about 20 g of dough and flatten it in the palm of your hand (wet your hands occasionally to prevent sticking).

Add approximately 15 g of filling in the center.

Carefully close the dough around the filling to form a sealed ball, then gently flatten it into a disc using your palms.

Line a tray with plastic wrap.

Place the shaped kubbahs on the tray. Repeat until all the dough and filling are used.

Once the tray is full, either freeze the kubbahs for later use or cook immediately.
