Lentil rice
INGREDIENTS
• 400g basmati rice
• 250g tinned lentils
• 3 tbsp oil
• 1 tbsp turmeric
• 1 tsp pepper
• 1.5 tsp salt
• 800ml water
• 400g onions, sliced in rings
• 3 tbsp oil (for frying onions)
HOW TO MAKE
1. In a pot, mix rice, lentils, salt, pepper, turmeric, and 3 tbsp oil. Add 800ml water.
2. Boil until water evaporates, then cover with a towel-lined lid and cook on low heat for 30 minutes (1 hour for crispy rice).
3. In a frying pan, heat 3 tbsp oil and sauté onions until golden brown.
4. Top the cooked rice with fried onions.
