Massafan cookies are made of almond flour, ground cardamom, sugar, egg whites, and rose water. The five ingredients come together in perfect harmony to create a dessert that is more than the sum of its parts.
Massafan - Almond Cookies
Yields: Approx. 16 cookies
Ingredients:
• 200 g almond flour
• 80–100 g granulated sugar (adjust to taste)
• 1 tsp ground cardamom
• 2 egg whites
• Rosewater (for shaping)
• almonds (for garnish)
Instructions:
Preheat the oven to 175°C (345°F) and line a baking tray with parchment paper.
In a bowl, mix the almond flour, sugar, cardamom, and egg whites. The dough will be sticky but should hold together well.
Pour a small amount of rosewater into a dish. Lightly wet your hands with the rosewater to prevent sticking.
Scoop about a tablespoon of dough and roll into a smooth ball.
Gently flatten each ball.
Pinch the edges 4–5 times to create a star shape.
Press almond into the center of each cookie.
Place cookies on the prepared tray and bake for 10–15 minutes, or until just lightly golden on the bottom.
Let cookies cool completely on the tray before serving or storing.
