Massafan cookies are made of chopped almond s, ground cardamom, sugar, egg whites, and rose water. The five ingredients come together in perfect harmony to create a dessert that is more than the sum of its parts.



🌸 Massafan – Almond Cardamom Cookies


Ingredients

• 200 g finely chopped almonds (not ground into flour — small texture is ideal)

• 90 g granulated sugar

• 1 tsp ground cardamom

• 2 large egg whites

• rosewater (for shaping)

• Whole almonds (for garnish)


Instructions


Preheat oven to 175°C (345°F). Line a baking tray with parchment paper.

In a bowl, combine chopped almonds, sugar, and cardamom.

Add egg whites and . Mix until a sticky but cohesive dough forms.

If the mixture feels too loose, let it rest for 5–10 minutes so the almonds absorb moisture.

Pour a small amount of rosewater into a shallow dish. Lightly moisten your hands.

Roll small portions (about 1 tablespoon each) into smooth balls.

Gently flatten slightly.

Pinch the edges 4–5 times to form a rustic star shape.

Press a whole almond firmly into the center. Bake for 12–15 minutes, until lightly golden.

Cool completely on the tray — they firm up as they cool.
