Luzina is a traditional Middle Eastern sweet made with quince, a fragrant fruit that resembles a cross between an apple and a pear.The quince is typically stewed with sugar,cardamon and rosewater.



Quince Luzina/Sferjah (Quince Sweets)



Ingredients:

• 1 kg quince

• 100 ml water

• 500 g sugar (for jam)

• 2 tsp lemon juice

• 1 tbsp ground cardamom

• 2 sachet vegan gelatine

• Ground almonds or coconut (for dusting)


Instructions:

Wash the quince, remove the core, and slice. Place in a pan with 100 ml water, cover, and simmer on low heat until tender (about 2 hours).

Add the sugar and continue simmering on low heat for 3 more hours, stirring regularly to avoid sticking or burning.

Stir in the lemon juice and ground cardamom.

Blend the mixture into a smooth paste. Add the vegan gelatine and mix well.

Grease a tray and line the bottom with parchment paper. Dust with ground almonds or coconut.

Pour the quince mixture into the tray and sprinkle more ground almonds or coconut on top.

Allow to cool, then cover and refrigerate overnight.

Once set, cut into squares or triangles and serve
