Sabich is a popular Iraqi pita sandwich filled with fried aubergine, hard-boiled eggs, salad, and a drizzle of tangy amba sauce.
Sabich (Eggplant and Egg Pita Sandwich)
Ingredients:
• 8–10 eggs
• 3–4 aubergines (eggplants)
• Oil for frying
• 1 tsp salt
• 1 liter water
Instructions:
Peel and slice the aubergines. Sprinkle them with salt and place them in a colander for 1 hour to draw out moisture.
Pat the aubergine slices dry with a kitchen towel. Fry in oil until golden on both sides, then drain on paper towels to remove excess oil.
Place the eggs in a pan with 1 liter of water and 1 teaspoon of salt. Bring to a boil and cook until hard-boiled.
(Optional) For a traditional flavor, bake the hard-boiled eggs in the oven at low heat (around 120°C) for 4–5 hours until the egg whites turn slightly brown inside.
To assemble: Take a pita bread, spread a layer of hummus, add a few slices of fried aubergine, some sliced hard-boiled egg, and a handful of salad.
Drizzle generously with amba (pickled mango sauce) before serving.
