Salad Olivier
Ingredients:
• 800g boiled potatoes
• 230g tin of peas, drained
• 8 cornichons (small pickled cucumbers in brine ), chopped
• 2 boiled carrots, chopped
• 350g smoked chicken breast, diced
• 2 teaspoons salt (adjust to taste)
• 1 teaspoon black pepper
• Juice of ½ lemon
• 200ml mayonnaise (about 1 tube)
• 6 boiled eggs, chopped
• Extra cornichons and tomatoes for garnish (optional)
Instructions:
1. chop the boiled potatoes and carrots into bite-sized pieces.
2. Chop the cornichons and smoked chicken breast into small cubes.
3. Peel and chop the boiled eggs.
4. In a large bowl, combine the potatoes, peas, carrots, cornichons, chicken, and boiled eggs.
5. Add the salt, pepper, lemon juice, and mayonnaise. Stir well to combine.
6. Adjust seasoning if necessary, and mix until everything is evenly coated with the mayonnaise.
7. Garnish with extra cornichons and tomatoes, if desired.
