SAMBUSAK BEL TAWA

(makes about 60 pieces)


INGREDIENTS:

Chickpeas

• 450g dried chickpeas (soaked overnight)

• 2 teaspoons salt

• 1 teaspoon turmeric powder

Chickpea seasoning

• 2 large onions, chopped

• 4 tablespoons oil

• 3 tablespoons cumin powder

• 1½ teaspoons salt

• 2 teaspoons pepper

• 2 tablespoons curry powder

• 1 teaspoon chili powder

Dough

• 1 kilo self-rising flour

• Pinch of salt

• 1 teaspoon instant yeast

• 1 egg

• 200ml oil

• 400ml water (room temperature)


HOW TO MAKE:

• Soak chickpeas overnight, wash and rinse well.

• Cook chickpeas for 1½ hours, season with salt and turmeric, cool, and finely chop in a food processor.

• Sauté onions in oil, add cumin, salt, pepper, curry powder, and chili powder, then add chickpeas and set aside.

• Combine flour, salt, yeast, egg, and oil, gradually adding water; knead and let rise 1 hour.

• Roll walnut-sized dough balls, add filling, fold into half-moons, and seal.

• Deep-fry until golden brown, then drain.
