INGREDIENTS:

• 450g chopped tomatoes

• 1 sweet red pepper, chopped

• 3 cloves garlic, chopped

• 2 teaspoons salt

• 1 teaspoon black pepper

• 3 tablespoons harissa paste

• 1 tablespoon tomato paste

• 1/2 tin (about 200g) chopped tomatoes

• 10 eggs

• 2 tablespoons olive oil

• Fresh parsley and chili flakes for garnish


HOW TO MAKE:

1. Heat olive oil in a large pan over medium heat. Add the chopped garlic, harissa paste, tomato paste, salt, and black pepper. Cook for 2 minutes, stirring occasionally.

2. Add the chopped red pepper, fresh chopped tomatoes, and tinned chopped tomatoes. Stir and let the mixture simmer for 10-15 minutes, until softened and the sauce thickens slightly.

3. Create small wells in the sauce using a spoon. Carefully crack the eggs into the wells.

4. Cover the pan and cook for 8-10 minutes, or until the egg whites are set and yolks reach your desired firmness.

5. Garnish with fresh parsley and chili flakes before serving.
