Shorba (or Shorbat Dajaj) is a Middle Eastern chicken-and-rice soup, often affectionately called “antibiotic soup” because people eat it when they’re sick, tired, or just need comfort.



Chicken Shorba


Ingredients:

• 1 small onion, finely chopped

• 2 chicken thighs, bone-in

• 1 tablespoon oil

• 1 teaspoon black pepper

• 1 teaspoon turmeric

• 2 teaspoons salt (adjust to taste)

• 1 can tomato pulp (≈400 g)

• 100 g rice, washed and drained

• 1 liter boiling water



Instruction:

Heat the oil in a pot over medium heat. Add the chopped onion and sauté until soft and translucent.Add the black pepper, turmeric, and salt. Stir well to release the spices’ aroma.

Add the chicken thighs and brown them lightly on all sides.

Stir in the tomato pulp and let it simmer for 5 minutes.Add the washed rice, then pour in the boiling water. Stir gently.

Cover and cook on low heat for about 45 minutes, stirring occasionally.Remove the chicken, shred or chop it into small pieces, then return it to the pot.

Simmer for another 5 minutes.

Serve hot. 🍲
