Shorbet Adas is a traditional Middle Eastern lentil soup,made with red lentils,onions,garlic and various spices like turmeric ,cumin,salt and pepper.It's a hearty,flavorful dish, often enjoyed as a starter or light meal.The soup is typically seasoned with lemon juice and garnished with fresh herbs.

Shorbat Adas (Iraqi Lentil Soup)


Ingredients:

• 500g red split lentils (washed until water runs clear)

• 1 large onion, finely chopped

• 6 garlic cloves, finely chopped

• 1 tsp pepper

• 2 tsp salt

• 1 tsp turmeric powder

• 2 tsp cumin powder

• 2 tbsp olive oil

• 1 vegetable stock cube

• 2 liters boiling water


Instructions:

Heat the olive oil in a large pot over medium heat.

Add the chopped onions and sauté for 2–3 minutes until softened.

Stir in the garlic and cook for another 2 minutes.

Add the turmeric, cumin, salt, and pepper, and mix well with the onions and garlic.

Add the washed lentils and stir to coat them in the spice mixture.

Pour in 1 liter of boiling water and crumble in the vegetable stock cube. Cover and cook for 20 minutes on medium heat, stirring occasionally.

Add the remaining liter of boiling water, reduce the heat to low, and simmer for another 30 minutes.

Blend the soup until smooth using a hand blender or in batches with a regular blender.


To Serve:

Ladle into bowls, squeeze fresh lemon juice over the top, and garnish with chili flakes and chopped parsley or cilantro.
