Silan (date syrup) is a thick, sweet syrup made from cooked and pressed dates. It’s a traditional Middle Eastern sweetener with a rich, caramel-like flavor and a texture similar to honey or molasses.It is a natural, unrefined alternative to sugar or honey, often used in both sweet and savory dishes.
Silan (Date Syrup)
Ingredients
• 1 kg Zehdi dates or Medjool dates
• ~1.5 liters hot water
Instructions
Remove the pits from the dates and place them in a large bowl.
Pour about 1.5 liters of hot water over the dates. Cover and let them soften for 60 minutes.
Transfer everything to a pot and bring to a gentle simmer (never a hard boil—this prevents bitterness).
Let it cook slowly for 45–60 minutes, until the dates are completely soft.
Mash the softened dates thoroughly.
Strain through a cheesecloth, pressing well to extract every drop of liquid—that’s where all the flavor is.
Don’t throw away the leftover date pulp—it’s perfect for cookies or baking.
Return the strained liquid to the pot and simmer gently for about 60 minutes, until it thickens into a rich, glossy syrup.
