Yakh Dar Behesht (Persian: یخ در بهشت) literally means “Ice in Paradise.”

ingredients
• 100 g rice flour
• 120 g corn starch
• 300–350 g sugar
• 5 tbsp rosewater
• 1 liter whole milk
• 1 liter cold water
• 50 g finely crushed pistachios
• Optional: dried rose petals for garnish
Directions
Dissolve the corn starch completely in cold water.
In a separate bowl, dissolve the rice flour completely in cold milk.
Make sure there are no lumps in either mixture.
Pour both mixtures into a heavy-bottom pot.
Place over low heat and stir constantly.
After 10–15 minutes, the mixture will begin to thicken.
Add the sugar gradually, stirring well after each addition.
Continue cooking on very low heat, stirring constantly to prevent
Once the mixture becomes very thick, glossy, and slow-moving, add the rosewater.
Cook for 1–2 more minutes only.
Pour into deep dish.
Gently shake or tap to level the surface.
Let cool to room temperature, then refrigerate at least 4 hours (preferably overnight).
Cut into squares or diamonds.
Sprinkle with pistachios and dried rose petals.
