Baghali polo Persian: باقلا پلو is a classic Persian rice dish made with fragrant basmati rice, dill, and fava beans. It’s especially popular for celebrations and is often served with slow-cooked lamb shank or chicken.



🌿 Baghali Polo (Persian Dill & Broad Bean Rice)


Ingredients

• 450 g basmati rice

• 400 g peeled broad beans (fresh or defrosted)

• 2-3 tsp salt

• 6–7 tbsp dried dill

• 8 tbsp oil (total)

• 8 tbsp bloomed saffron water

• 2 large potatoes, sliced (for tahdig)

• Water


Instructions


Rinse the rice thoroughly (8-10 times is enough until water runs mostly clear).

• Add salt and rice

    • Add 1.5 liter water

• Boil for 6–8 minutes until the rice is par-cooked (soft outside, firm inside).

Drain and gently rinse with lukewarm water.

Heat 4 tbsp oil and 2 tbsp saffron water in a pot.

Arrange potato slices evenly on the bottom.

Add a layer of rice. Sprinkle some dill and broad beans.

Repeat layering until everything is used, finishing with rice on top.

Using the back of a spoon, poke a few holes in the rice (for steam).

• 3 tbsp oil

• 4 tbsp water

• 2–3 tbsp saffron water

• Drizzle evenly over the rice.

• Wrap the lid with a clean tea towel and cover the pot.

Cook on medium heat for 45 minutes

Chicken or lamb shank

Salad Shirazi (fresh cucumber, tomato, onion, lime)
