Persian Watermelon & Cucumber Salad


Ingredients


  • 600 g watermelon, cut into bite-sized cubes

  • 2 persian cucumber (about thinly sliced or diced

  • 100 g feta cheese, cubed

  • Zest and juice of 1 lime

  • 10–15 g pistachios

  • 1 handful fresh mint leaves, finely chopped

  • Pinch of flaky sea salt


Method


Place the watermelon and cucumber in a large serving bowl.

Add the chopped mint, lime zest, and lime juice.

Scatter the feta cheese over the salad.

Sprinkle with the chopped pistachios,  and gently toss to combine.

Finish with a pinch of flaky sea salt and serve immediately.
