PISTACHIO

Fresh pistachios are a seasonal delicacy, harvested before they are fully dried. They have a soft, slightly sweet flavor and a tender texture compared to the crunchy dried nuts.  Pistachios originate from the Middle East and Central Asia, with their earliest cultivation traced back thousands of years to Iran and Afghanistan. Today, Iran is still one of the top producers, along with the United States (especially California), Turkey, and Syria.
